Putien Xing Hua Mee Sua (Wheat vermicelli)


A must have for Chinese New Year. Traditional Putien Xing Hua Mee Sua (longevity noodles). There are different components to this dish and takes some time. However, the result is always amazing and comforting

Ingredients: For 8 – 10 persons
5 onion chopped
2 Pork Loin, sliced thin. (Season with 3tbsp light soy sauce, 2tsp white pepper & 3 cups shao xing wine
5 garlic, chopped
120g Dried Mushroom, soaked overnight (keep the water for soaking). Sliced thin when it’s dehydrated. Seperate the water and the mushroom
Black Moss
Peanut
Eggs

Directions:
(A) For the Soup Base:
Red Mushroom (if you can’t find this, you could just boil a simple pork rib soup without the red mushroom)
1kg Pork rib for soup.
1. Wash the red mushroom.
2. Boil the pork ribs in hot water for about 8-10mins to remove all scums.
3. In a soup pot put the red mushroom and pork ribs together to boil. Once boiling, Turn down the to simmer for 1.5 – 2hrs

(B) For the Mushrooms:
1. Fry a little garlic and chopped onion. Don’t use all, keep aside some for frying the pork
2. Add the soaked mushroom and stir fry
3. Add 2 tsp light soy sauce
4. Add 1 tsp sesame oil
5. Mix well and plate out. Put aside

(C) For the Pork:
1. Add oil to same pan. Fry balance garlic and onion
2. Add the meat. Stir fry. Add little sugar.
3. Once you notice the meat is not red, add in the mushroom (B) and stir fry together
4. Add 2/3tbsp of oyster sauce and dark sauce 1tsp for colour. ( to taste)
5. Add mushroom water. Just enough to cover the meat & mushroom.
6. Simmer until boiling.  Take out the meat to prevent overcook. Continue to stew the mushroom until soft

(D) For the Vegetables
You can use snow peas or pok choy or chye Sim here.
1. Boil hot water and cook it through in the water. Drain and put aside

(E) Other Components
1. Black moss veg. Fry, cool down and put aside (optional)
2. Peanuts fry, cool down and put aside. Bottle it when cool (optional)
3. Fry the eggs omelette and cut into strips.
4. Cilantro, for platting

Assemble the bowl of Mee Sua:
1. Take the portion of mee sua to your liking
2. add a spoonful of the Mushroom and Meat sauce with some mushroom and meat
3. add the veg, egg, black moss, peanut
4. Add the soup according to how much you like. Usually around one – 2 ladle as this dish is not meant to be soupy
5. Cilantro to dress it up and Serve.
6. I like to add a little chilli padi for the kick. Totally optional
