LAP MEI FAN 臘味飯 CHINESE PRESERVED (WAXED) MEAT RICE

Another Family favourite dish at home. Often cooked during Chinese New year.  For healthier reason, we use basmati rice for this. Cooked with all the flavourful waxed duck, pork belly, Chinese sausages and so on.  Is always a winner on the dinner table.

Ingredients:
5 rice cups rice, wash the rice
1 Wax pork (cut slices so easy to bite)
1 Wax duck leg, chopped into pieces
2 Lup cheong (Chinese sausage)
2 Pork liver sausage
8- 10 shallots, chopped
Handful of dried prawns (soak in water, keep the water for the rice)
Handful of dried oyster (soak in water, keep the water for rice)
150g Mushroom half packet. Soak in water. Keep mushroom water for rice.
1tbsp light soya sauce
1tsp sesame oil

* Pork liver and lup cheong pour hot water for awhile to remove the wax skin

Directions:

1. Fry the mushroom with little oil and add the light soy sauce and sesame oil. Mix well, plate and put aside

2. Fry onion until brown. Then add oyster n dried prawns in. Fry together until fragrant

3. Add the some mushroom water to it. Add mushroom. Cover pot, high fire to boil

4. Add the rice into the rice cooker. Add the Mushroom you have cooked in the pot into the rice together with water amount enough to cook rice.

5. Add the Pork Belly and waxed duck into the rice and put the rice to cook in the the rice cooker. Check occasionally and if rice is not cook, add more mushroom water if still have or tap water.

6. about 10mins before the rice is cooked. Open the rice cooker and place the sausages into the rice.

7. when the rice is cook, take out the sausages, cut into thin slices and put in back into the rice cooker. Mix the rice well

8. served with Cilantro and chilli by the side.
