Love this dish. Refreshing, good balance of sour, spicy with the nice crunch from cucumbers and all. And Easy!
The same sauce, I used it on another dish on chilled tofu and is also just as good.
Do not overcook the squid, it will turn all rubbery.
Ingredients Serves 2
2 Squids, cleaned
1 ½ Tbsp soy sauce
1 ½ Tbsp lime juice
1 Tbsp sugar
Chilli padi, to taste, minced (i use 4, u can adjust to taste)
1 Tbsp small diced shallots
1 Tbsp finely chopped lemongrass
3 sprigs cilantro, chopped
3 mint leaves, chopped (optional)
¼ cup small diced cucumber
2 tsp very finely diced red bell pepper (optional)
INSTRUCTIONS
1. Steam the squid for 2 mins. When cooked, cut the squid to bite size.
2. Combine soy sauce, lime juice, sugar and minced chilli padi; stir until sugar is completely dissolved. Add shallots, lemongrass, cilantro, cucumber, and red bell pepper; stir to combine.
3. Spoon the sauce over the squids. Serve on its own or with hot jasmine rice.
