
Comfort food for those lazy days. One pot chicken stew, easy to prepare, goes well with steamed rice.
Chicken Stew (Home-Style Comfort)
Serves: 4- 5
Time: ~40 mins
Ingredients
6 chicken drumsticks (or 400–500g chicken, chopped)
2 large onion, chopped
2/3 carrot, cut into chunks
Chinese cabbage (wong bok), cut into chunks
Button mushroom (1 tin) – optional
Black Fungus, soak in water
Water (enough to just cover ingredients)
Salt (for marinade + seasoning)
Sugar (to taste)
1 cinnamon stick
Sauce Mix
3 tbsp light soy sauce
1 tbsp oyster sauce
1 cap Shaoxing wine
Black pepper (to taste)
Method
Prep chicken
Lightly season chicken with salt. Set aside.
Build the base
Heat a pot, sauté onions with a pinch of salt until soft and slightly sweet.
Add chicken
Add chicken pieces and sear lightly for a bit of colour.
Add vegetables
Toss in carrot, potato, cabbage, black fungus, button mushroom, cinnamon stick
Add liquid
Pour in enough water to just cover everything.
Season & simmer
Add the sauce mix. Bring to a boil, then lower heat and simmer (covered) for about 20 minutes.
Final seasoning
Taste and adjust with salt and a touch of sugar.
