Dry Laksa


Simple comfort food yet flavorful.

Ingredients: Serves 4
Curry Laksa Paste
Tau Pok (qty up to you but I love it when it soaks up the curry)
2 pcs of Tau Gwa (optional)
Protein of your choice (prawns or chicken)
Coconut milk 200ml
Water 300ml
2 Tbsp Garlic, chopped
2 Tbsp Small Onion, Chopped
Fish Sauce (to taste)
Oil
Mee Tai Bak (500g)

Calamansi
Hard Boiled Eggs (topped the laksa with it)

Method:
1. Add Oil in frying pan, add in the chopped garlic and onion, fry till fragrant.
2. Add in the curry laksa paste, fry till fragrant
3. Next, add in the Taupok and the protein. Add 300ml water. Stir all ingredients to make sure everything is mixed well. Add Fish sauce, stir well. Cover the pan to allow the protein to cook.
4. Open the pan, add the coconut milk and Mee tai bak. Stir and mix well. Let the Mee tai bak cook, about 10mins.
5. Add the beansprouts. Stir and mix it in.
6. Plate. Squeeze some calamansi over it and tuck in!

P.s
I didnt have beansprouts, so I added french beans instead.
