Drunken Noodles (Pad Kee Mao) – Easy version


I have another Drunken noodle recipe on my blog. This is a simpler version and taste better….I feel…

You can replace the noodle with spaghetti for a fusion version. I used minced pork in this recipe as I have lots of it in my fridge but Pork fillet, chicken breast, thigh etc. is fine too. I like to serve it with mint, cilantro and squeeze some lime. These are optional

Ingredients: Serves 4
10 small garlic cloves, roughly chopped
10 birds’ eye chillies, roughly chopped
Vegetable oil
250g pork fillet, thinly sliced or minced pork
2 tbsp oyster sauce
2 tbsp fish sauce
2 tsp sugar
600g Rice stick noodles, cook it as per packaging instructions
1 handful Thai holy basil (sweet basil is ok if u cant find Thai holy basil)

INSTRUCTIONS
1. Use a mortar and pestle to pound the garlic and chillies to a rough paste.If u dont have a mortar you can sort of bruised it with your spoon

2. Heat the vegetable oil in a wok over high heat. Add the garlic chilli paste and stir-fry for 30 seconds. Add the minced pork or your protein you are using and stir-fry until almost cooked.

3. Then add the oyster sauce, fish sauce and sugar. Stir-fry for another minute.

4. Add the rice noodles and stir-fry for another half a minute. Then toss through the holy basil. Remove from heat and serve.
