Baby Spinach Salad with Cranberries and Mandarin Oranges

This is one of my favourite salad. It is refreshing and can be eaten on it’s own or as a side. The combination of baby spinach, cranberries, mandarin oranges, well complimented with the honeyed almonds, red onion and cheese is practically a symphony in your mouth.

It is easy and takes barely 10mins. Try it!

Ingredients: serves around 6

8 cups baby spinach leaves (I used one packet of those I bought at local supermarket)

1/2 medium red onion, sliced and seperate the rings

1 mandarin orange, remove the skin (1can mandarin oranges, drained can be used too if you can’t get fresh ones)

1 1/2 cups dried cranberries

1cup honey roasted almonds (you can sliced it or for me I just kind of smash them up to smaller bits)

1 cup crumbled feta cheese (blue stilton cheese would taste fantastic too or you can leave cheese out totally and salad will still taste as good)

1 cup balsamic vinaigrette or to taste

Directions:

Mix the spinach, red onions, mandarin ornges, cranberries, almonds and cheese together. Drizzle dressing over the salad. Mix well and serve.
