Sauteed Asparagus can be served as sides or as a main dish. Main dish for me when I am on my salad day.
I like it with my eggs benedict and it is so easy to prepare.
Ingredients:
1 tbsp butter
1/4 cup olive oil
1 pound fresh asparagus spears
Grated Parmesan cheese, according to taste (I found pecorino cheese in my fridge, so I use that instead)
Salt and pepper to taste
Directions:
1. Melt butter with olive oil in a large skillet over medium heat.
2 Add asparagus spears, and cook, stirring occasionally for about 8 minutes, or to desired firmness.
3. Drain off excess oil, and sprinkle with Parmesan cheese (pecorino cheese), salt and pepper.
Note: I use butter for the flavor. You may substitute with more olive oil if you do not want to use butter
