Fresh Fig with Arugula/Spinach Salad


I am preparing one of my favourite salad for the 2 of us for lunch today. All my favourite in one bowl, just the way to kick off Monday Blues!
I added Blueberries in my dish today, just because I love berries and I saw it in my fridge. You can add dried cranberries as well. You can even replace Pine nuts with Walnuts. If you don’t like Blue Cheese, you can always replace it with Goat cheese or Parmesan Cheese. It’s so versatile and totally up to you.

Ingredients
4 cups spinach or arugula ( I actually mix both)
2 – 3 fresh figs, halved or quartered
1/4 cup Blue cheese
2 tbsp toasted pine nuts
2 tbsp honey
2 tbsp balsamic vinegar
2 tbsp olive oil
Handful of Blueberries (optional. I just added coz I love berries and I see it in  my fridge. You can even add dried cranberries)

Directions
1. Toss spinach/arugula, figs, blue cheese, blueberries and pine nuts together in a large bowl.
2. Mix balsamic vinegar and olive oil together.
3. Drizzle honey and balsamic dressing over salad before serving.
