This is an easy recipe to cook a nice soup.
We cook soup everyday at home and winter melon is one of the soups I like. I like clear soup and to cool us down.
Ingredients:
500g winter melon, remove skin and cut into pieces
2 chicken carcass, boiled in hot water for 3-5mins
2 carrots, chopped to pieces
8 red dates
1 honey dates
2-3 cilantro roots (optional)
2tbsp goji berries
Salt, to taste
Water, around 2 litres ( I just make sure the water covers everything)
Directions:
1. Add water in a large pot to a boil.
2. Add chicken carcass, red dates, and winter melon to the pot. Cover and bring water back to a boil. Reduce heat to low. Simmer for about 1½ to 2 hours. Skim off any scum appearing on the surface.
3. Season with salt and add goji berries. Continue to boil for another 5 minutes. Turn off stove.
