Soy Sauce Chicken Noodles


Easy dish that everyone will definitely enjoy.

Braised soy sauce chicken, together with wanton noodles and pickled chilli. I added shrimp dumplings and balanced off with blanched vegetables.

Ingredients:

  • 5 chicken drumstick
  • 100g chye sim or your preferred vegetables (chinese mustard leaves)
  • 1pkt wanton egg noodles (there’s 5 portions in there)
  • Pickle sliced green chillies

Braising sauce:

  • 1 bulb garlic, cut half
  • 6 slices ginger
  • 80g spring onions, cut 3 sections
  • 1.5 litres water
  • ½ cup rice wine
  • ½ cup dark soy sauce
  • ½ cup light soy sauce
  • 3 tablespoon brown sugar or 40g rock sugar
  • 1 tsp five spice powder
  • 2 cinnamon sticks
  • 2 star anise

Instructions
1. Add to pot 1.5 litres water and all ingredients for braising sauce.

2. Bring to boil. Once boiling, add in 5 chicken drumsticks

3. Cover and let it simmer for 45 minutes

4. Remove chicken from sauce and set aside

5. Blanch the vegetables for 1 minute, drain and set aside. You can divide them equally to 5 set aside

6. Boil the noodles according the the packaging instructions

7. Drain and soak in cold water 10 seconds and return to boiling water for a quick dip. Drain and transfer to serving plate

8. Add 1 tsp sesame oil and 4 tbsp braising sauce to noodles, mix well and add blanched vegetables

9. Chop chicken thighs into serving portions and add to noodle

10. Serve noodle with pickled green chillies
