Kale Mango Salad


Felt like having something healthy and clean after a whole month of birthday celebrations in September.

I’m preparing a simple Kale Mango Salad. You may add nuts( toasted n crushes pistachios, pine nuts, cashew nuts or any of your favourite nuts)in it and even dried cranberries.

Time for detox!

Ingredients: Serves 4
1 full bunch of Kale, stalks removed and discarded, leaves thinly sliced
2 mangoes, cut into cubes
Pine nuts (optional)

For the dressing:
1 lemon (cut down to 1/2 lemon if you don’t like it too sour), juiced
1 orange, juiced
Kosher salt
Black pepper
Olive oil

1. Combine all ingredients for dressing into a bowl. Adjust the dressing to taste accordingly.

2. Add the kale into the bowl and massage the kale with your hands for at least 1 min together with the dressing.

3. Add chopped mango, toss all together, and serve. You may add the pine nuts and toss too (optional)
